This eight-treasure congee is a classic Chinese dessert that’s both comforting and nourishing. Despite the name, it contains more than eight ingredients—a hearty blend of grains, beans, and dried fruits that simmer into a creamy, sweet porridge.

Using a pressure cooker cuts the cooking time significantly while still extracting the flavors from the beans and grains. The natural sweetness from red dates, raisins, and rock sugar makes it a perfect breakfast or dessert.

Why this worksSoaking the beans and grains overnight can reduce cooking time and improve texture. Adding raisins and goji berries after cooking preserves their flavor and prevents them from becoming too soft. Adjust sweetness by adding more or less rock sugar.
