Ingredients
Tap an item to tick it off- 200 g fresh beef, thinly sliced
- 1 green bell pepper, sliced
- 1/2 small carrot, thinly sliced
- 2 slices ginger
- 1 tbsp (15 ml) cooking wine
- 1 tbsp (15 g) oyster sauce
- 2 tbsp (30 ml) soy sauce
- 1 tbsp (8 g) cornstarch
- Salt to taste
- Cooking oil as needed
- 1 scallion, cut into 2 cm pieces
Method
1
In a bowl, combine the beef with 1 tbsp cooking wine, 1 tbsp oyster sauce, 1 tbsp soy sauce, and 1 tbsp cornstarch. Mix well and marinate for 15 minutes.
2
Heat oil in a wok over high heat. Add the beef and stir-fry until it changes color, then remove and set aside.
3
In the same wok, add a little more oil if needed, and sauté the ginger and scallion until fragrant.
4
Add the carrot and stir-fry for 1-2 minutes until slightly softened.
5
Add the green pepper and stir-fry until it is crisp-tender.
6
Add 1 tbsp oyster sauce and 1 tbsp soy sauce, and stir to combine.
7
Return the beef to the wok, add 1 tbsp soy sauce, and toss everything together quickly until well coated and heated through.
8
Transfer to a serving plate and serve immediately.
Why this worksSlicing the beef against the grain ensures tenderness. The cornstarch in the marinade protects the meat from drying out during the quick stir-fry. Be careful not to overcook the beef; it should be just cooked through to stay juicy.
